My dad, who is not a vegan, loves this pilaf. I don't need the stamp of approval from non-vegans to feel good about my food but it is usually nice, especially from those who lean more toward the skeptical side about vegan eating. This is a great side dish with any meal (such as this Indian-inspired dinner plate) and is easy to make.
Smoke Spices Rice Pilaf (serves 4-6 as a side dish)
1 cup uncooked rice (I use brown, use whatever you want)
1 can chick peas, rinsed and drained
1/2 cup chopped walnuts or pine nuts, toasted
Cumin
Coriander
Curry powder
Salt
White Pepper
Olive Oil
Cook the rice according to the package directions. A few minutes before it is done, stir in the chick peas. When the rice is fully cooked, add the walnuts, a bit of curry powder, a liberal amount each of cumin and coriander, and a few dashes each of salt and pepper. Add a drizzle of olive oil, and stir.
