I love ice cream. A lot. But sometimes when I am lazy and
don’t have any I just make it in the blender. Clever, eh?
Blender Ice Cream (serves 1)
1 cup frozen fruit (I like raspberries and strawberries but
anything you want is fine)
A heaping spoonful of molasses (or agave nectar, or maple
syrup, etc.)
A few splashes of non-dairy milk or creamer (I think soy creamer is best for this)
Put all ingredients in the blender, and blend until it is the consistency of ice cream, adding
more milk or creamer as necessary. I’ve always eaten this right away so no
promises on how it freezes if you make a bigger batch.
