Mac and Cheese

Note: This recipe has been revised from its original posting. So if you tried the recipe a while back and it didn't do it for ya, give the new one a try :)

I am a huge fan of macaroni and cheese. If you're looking for a ready-made product I find Teeze to be amazing (needs a little salt though), but if you want something homemade that isn't a giant chunk of saturated fat (sorry, Teeze), give this cheese sauce a try.


Mac and Cheese (Well just the sauce. Pour it over macaroni. Duh.)


1 cup cold soy milk

1/4 cup nutritional yeast flakes
1/2 Tbs. vegan butter
1 tsp. garlic powder
1/2 tsp. salt
1 3/4 tsp. sugar
1/4 tsp turmeric
1/8 tsp. liquid smoke
1 Tbs. yellow mustard
1 tsp. white miso
2 tsp. flour
1/4 tsp. vinegar

In a small pot (not over heat yet) whisk the nutritional yeast into the soy milk until it is fully dissolved. Heat the mixture over medium heat and whisk in the remaining ingredients - except for the flour and the vinegar - until fully dissolved. Increase the heat as needed to bring the mixture to a low boil, then remove from heat and whisk in the flour until thickened. Once thickened, whisk in the vinegar.




You could make this healthier by adding broccoli or peas but since this dish is not known for it's quality nutritional properties, why would you? (I had broccoli I needed to use. That's why.)
