Almond butter


The possibilities for this nut butter are endless…spread it on toast, use it as a dip for fruits and veggies, scoop it into smoothies, stir it into applesauce with some cinnamon for a snack. Peanut butter is a poor man’s friend but almond butter, not so much. So be kind to your wallet and make some yourself.

Almond butter (makes enough for about 2 weeks of consistent yumminess)

2 cups raw unsalted almonds
1 tsp. sugar*
½ tsp. sea salt*
*Sugar and salt to taste

Roast your almonds under the broiler until they are fragrant and start to pop, stirring occasionally. WATCH THEM, as it takes about 0.4 seconds for them to go from perfect to burnt.

Put the almonds in a food processor and blend away until it looks like almond butter (about 15 minutes). You may have to stop and scrape the sides a few times. When it’s almost at the consistency you want, add the salt and sugar to your liking. Add cinnamon or whatever else you want. Keep it in the fridge.
