One Perfect Pancake


You know those mornings when you wake up and just want pancakes? But who wants to make an entire batch of pancakes for themselves and either put the rest of the batter in the fridge where you will invariably forget about, or spend the time to make the rest of the pancakes and freeze them? Not me. When I want pancakes, I make single-serving batches. Which you can do as a vegan (hey, no egg!)

One Perfect Pancake (serves 1)

¼ cup flour
1 tbl. sugar
1 tsp. baking powder
A pinch of salt
Your favorite non-dairy milk
A handful of blueberries, chocolate chips, walnuts, etc. (optional)
A pat of vegan butter (NOT margarine. Gross. Vegan butter.)

Start heating the butter in a small pan. Mix all of the dry ingredients together. Slowly add the milk and stir until the consistency is somewhere in between thick soup and cookie batter. Add berries, etc. if you want and pour your batter in the pan. You’ll know it’s ready to flip when the top side has bubbles that start to pop.

For a variation, blend up berries with a splash of milk as the wet ingredients. It makes the batter a crazy berry color that does have a brown sear as you cook it, but it tastes amazing and the inside is still a vibrant purple. The pancake below is made with blackberries.


For another variation substitute 2 Tbls. of flour with 2 Tbls. of cornmeal. We like these best with strawberries!
