Berry Kale Muffins

Berry kale muffins? Yup, that's right. I've baked with kale before, mostly as an attempt to get a certain someone to eat more greens while away on business trips, but hey, you can't taste it in baked goods and it's a great way to add more vitamin everything to your diet. Plus, these muffins are so technicolor awesome that you won't even think about the fact that there's kale in your muffin. 

Berry Kale Muffins (makes 6)


1/4 cup non-dairy milk

1/2 cup fresh berries (I've never made these with frozen berries before, but I'm assuming if you thawed them they'd work fine)
2 Tbs. apple sauce
3/4 cup flour
1/4 cup sugar
2 tsp. baking powder
Pinch of salt
1 leaf kale, finely chopped

Preheat your oven to 375 F. Combine all of the dry ingredients in a bowl. Blend the milk, berries, and apple sauce together until smooth and add to the dry ingredients. Stir in the kale. Line your muffin tins and fill each well about 2/3 with batter. Bake for 20 minutes.



I love the color. And the little piece of kale sticking out.
These are made with blackberries.
