Greens Galore Peanut Noodle Salad

Want a tasty meal in 20 minutes? I made this dish as lunch for the week and plan on making it again for dinner as the food-to-prep-time ratio is quite good, and the dish was tasty both hot and cold. I used linguine because it was much cheaper than udon noodles but if you're willing to splurge a couple bucks I recommend using udon. And as always, feel free to substitute any veggies you prefer.

Greens Galore Peanut Noodle Salad (serves 4)

4 servings of linguine or udon noodles (check the package)
Drizzle of sesame oil
2 cups frozen edamame
2 cups frozen peas
2-3 leaves of kale, shredded
1 recipe peanut sauce
2-3 green onions, chopped
1/4 cup chopped peanuts
2 Tbls. sesame seeds

Make the noodles according the package directions. Drizzle with sesame oil and set aside.

While the noodles are cooking, microwave the peanut butter for the sauce and set aside. Put the edamame in a large microwave safe bowl and add just enough water to cover them. Microwave for 2 minutes, then add the peas and a bit more water and microwave for 3 more minutes. Drain and set aside. While the edamame and peas are cooking, make the peanut sauce and chop the kale, green onions, and peanuts. Drain the edamame and peas.

Stir together the noodles, sauce, edamame, peas, and kale. Top with green onion, peanuts, and sesame seeds.
