I admittedly have no experience with authentic Thai cuisine, but the Americanized versions at least use a lot of peanut-based sauces. Which I love. So I made some in my kitchen, and I think it's pretty good. This sauce is fairly thick so if you prefer a thinner sauce just add water until it's the desired consistency.
Peanut Sauce (makes 1/3 cup)
1/4 cup smooth peanut butter
2 Tbls. brown sugar
1 Tbls. brown miso
1/2 tsp. ground ginger
1 Tbls. rice wine vinegar
1 tsp. mirin
Red pepper flakes (optional)
Melt the peanut butter in a microwave-safe bowl (about 30 seconds). Stir in the rest of the ingredients, adding red pepper to your liking. Use over noodle dishes, rice dishes, vegetables, or just eat it with a spoon.
